Chinese Shrimp Stir Fry Recipe With Vegetables

A simple weeknight meal that only requires a few ingredients and takes 20 minutes to prepare is shrimp stir-fried with vegetables! 

For this straightforward, healthful, and low-calorie shrimp stir-fry meal, you may use any vegetables you choose, frozen or fresh, and you can adjust the heat level to your liking. Moreover, it is devoid of dairy and gluten!

One of my favorite proteins to cook is shrimp. Why? Because it cooks through in approximately three minutes and is pretty healthful. I always have some in my freezer for quick, wholesome, and simple weekday meals.

With abundant vegetables, this shrimp stir fry is packed with healthful, nutritional ingredients. Four full cups of vegetables! What’s the best thing, then? For this dish, you can use any vegetables you like, frozen or fresh (I used shredded carrots, bell peppers, and asparagus).

Components and Alternatives

Search shrimp that have already been peeled and deveined to save time. I used shrimp that were already frozen and easily peeled; I kept the shrimp skins in my freezer to use for later seafood stock. I like to use “jumbo” sized shrimp for this recipe, but you can use any size.


I combined shredded carrots, red bell pepper, and fresh asparagus. Use whichever vegetables you desire, fresh or frozen! This is a terrific way to use up what’s in your fridge and cut down on food waste: broccoli, snow peas, cauliflower, green beans, tiny corn, and sliced carrots. 

Use frozen vegetables; cook them according to the recipe’s instructions, but a little longer.

When using green onions, utilize the white and light green sections towards the beginning and the dark green bits towards the finish as a garnish.

Loads and loads of garlic! I cut my fresh garlic finely. If preferred, you can use pre-minced garlic from a jar.

Again, a lot of ginger! I used fresh ginger that was diced. If you’d like, you can use a microplane zester to grate it or garlic paste for a quicker option.

Ingredients for sauce: 

Cornstarch, honey, toasted sesame oil, lime juice, soy sauce, and chicken broth (or water). For a spicier variation, you can add sriracha or chili garlic paste. If you have sesame seeds, you can add them for texture. Replace cornstarch with arrowroot powder for a grain-free paleo option. For other sauce variations, see below.

How to Prepare a Vegetable and Shrimp Stir-Fry

Prepare all of your other ingredients and stir in the sauce.

In a big skillet or wok, sauté the ginger, garlic, and green onions in oil until they become tender and begin to toast.

When the vegetables are crisp-tender, add them and continue to sauté for a few more minutes.

When the shrimp are almost cooked, ADD them and continue to cook.

Stir in the sauce and simmer until the sauce thickens and the shrimp are cooked through and opaque.

Serve over cooked rice, quinoa, noodles, zoodles, or cauliflower rice for a low-carb/paleo option.

Advice and Techniques

Prepare everything before starting to cook. This recipe comes together quickly, so before you start, you should have all of your vegetables chopped, the shrimp defrosted and skinned if needed, the sauce combined, etc.

I suggest using a bag of mixed frozen vegetables or pre-chopped fresh vegetables to reduce prep time. Your grocery shop likely has a frozen vegetable “stir fry mix” that would be suitable. You can substitute pre-made minced garlic and ginger paste to save even more time.

Again, this dish moves quickly, so start preparing the rice or whatever you’re serving with the stir fry before you begin making the stir fry.
